Day 76 – When Kate cooked and ate baked sweet potato chips!

I love sweet potato! It is so much nicer than your average potato, more flavour and just divine – seriously, one of, if not my very favourite food. I’ve had baked sweet potato with various fillings – tuna, yogurt, cheese, beans and coleslaw…but today it was the turn of chips, so to speak!

Ok so not chips in the traditional sense but hey! The process was exceptionally simple, even I could manage it :-P I literally, slice the potato into wedge like shapes, a bit thicker than the conventional “fries”…chunkier chips are better in my mind! I then place them on a baking tray, cover them in a little bit of olive oil and pepper. I popped them in the over for 50 minutes, were they went a little bit crispy…and that was it! BEAUTIFUL!
